Jollibee: a Quezon City ice cream parlor that beat McDonald's at home

After McDonald's entered the Philippines in 1981, ice-cream-parlor-turned-burger-chain Jollibee beat it with sweet Jolly Spaghetti and garlicky Chickenjoy.

What it had to solve

Tony Tan Caktiong and his family opened a Magnolia ice cream parlor in Quezon City, just outside Manila, in 1975, when Tony was 28. When hot meals and sandwiches out-sold ice cream, they converted the parlor into a fast food restaurant — the first Jollibee — in 1978, with seven branches in Metro Manila by year's end and the first franchise in 1979.

How it works

Jollibee began as a Magnolia ice cream parlor opened by Tony Tan Caktiong and his family in Quezon City in 1975. When hot meals and sandwiches began outselling ice cream, a management consultant advised converting the parlor into a fast food restaurant; the first Jollibee opened in 1978 under the working name Jolibe, and there were seven branches in Metro Manila by the end of that year and the first franchise by 1979.

The test came in 1981, when McDonald's entered the Philippines with thousands of branches while Jollibee had only a couple dozen outlets. Friends told the family to back off from the global giant; instead the brothers ran a SWOT analysis. Their conclusion: Filipinos favor sweeter and spicier flavors, and McDonald's could not serve those without breaking its 'iconic American taste.' Jollibee went on the offensive with Jolly Spaghetti, spicy burgers and the fried chicken that led Ernesto to joke, 'Instead of chickening out, we actually serve Chickenjoy.'

The bet worked because local taste was a moat rather than a product tweak. Jollibee became the Philippines' largest fast food chain, the largest restaurant company in Asia in 2014, and by 2019 reported more than 3,500 stores at home and about 1,000 abroad, with non-Filipino customers making up half of its overseas base. The chain later exported the same formula to Singapore, Brunei, the United States and Europe.
